Cherry Vanilla Ham Glaze

Ingredients:

  • 1 cup frozen cherries, thawed and chopped
  • 1 cup brown sugar
  • 2 tablespoons vanilla extract
  • 1 tsp ground cloves

Directions:

  • Mix all ingredients together, blend well.
  • Pour over ham prior to baking.

Vanilla Citrus Vinaigrette

Ingredients:

  • ¼ cup vinegar
  • ½ cup olive oil
  • 2 tablespoons vanilla extract
  • 2 tablespoons orange juice concentrate
  • 1 tablespoon lemon juice

Directions:

  • Whisk all ingredients together, blend well.
  • Lightly coat salad greens.
  • Serving suggestion:  Add chopped apples, sliced pears, dried cranberries to mixed greens.
  • Serve immediately.

Vanilla Tangerine Martini (Serves 2)

Ingredients:

  • 1/2 cup fresh squeezed tangerine juice
  • 3 ounces vodka
  • 2 ounce triple sec
  • 1 tsp vanilla extract vanilla sugar
  • 2 whole vanilla bean (1 for vanilla sugar, 1 for garnish)
  • 1/4 cup vanilla sugar (In advance, add 1 chopped vanilla bean to 1/4 cup granulated sugar.  Let sit for several days or more.)

Directions:

  • Pick out your favorite martini glass, dip rim in tangerine juice and dip into vanilla sugar.
  • Add tangerine juice, vodka, triple sec, vanilla extract, and ice to shaker.
  • Shake vigorously and pour into prepared martini glasses.  Garnish with tangerine and whole vanilla bean.
  •  Enjoy immediately.
