Yum! Learn how to make avocado chicken salad & curry chicken salad



In this week's Dining with Duria, Angelica shows us how to make Avocado Chicken Salad and Curry Chicken Salad.

Avocado Chicken Salad

Ingredients:

-          2-3 leftover cooked chicken breasts, shredded or cubed

-          ½ avocado

-          ½ cup plain low-fat or fat-free Greek yogurt

-          ¼ cup of lime juice

-          3 celery stalks, diced

-          ½ cup red onion, minced

-          Salt and pepper to taste

Directions:

-          In a bowl, mash together avocado, Greek yogurt and lime juice.

-          Toss in chicken, celery, red onion and cilantro.  Season with salt and pepper to taste before serving.

(NOTE: Greek yogurt may make the salad taste more tart/sour than normal. You can use yogurt with a higher fat content or mayo depending on taste.)

Curry Chicken Salad (Whole Foods knock-off)

Ingredients:

-          2-3 leftover cooked chicken breasts, shredded or cubed

-          ¼ cup almond slivers

-          1/3 cup red currants, or diced dried mixed berries and raisins

-          1 bunch scallions, chopped

-          ¼ cup mango chutney

-          ¼ cup of Greek yogurt (can add more to make salad creamier)

-          1 tsp. curry powder

-          Dash turmeric

-          Salt and pepper to taste

Directions:

-          In a bowl, combine Greek yogurt, chutney, curry powder, turmeric.

-          Toss in chicken and all the other ingredients.  Season with salt and pepper to taste before serving.
