Bursting-With-Berries Blueberry Muffins

Bursting with juicy, plump blueberries, these tender muffins will melt in your mouth (and maybe turn your teeth blue).

Level 2

Makes 12 muffins

Time 45 minutes

Ingredients

  • 2 cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup sugar
  • 1 large egg
  • 2 tablespoons canola oil
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh or frozen blueberries

Equipment

  • Muffin pan with 12 cups
  • Paper baking cups
  • Measuring cups
  • Measuring spoons
  • Medium mixing bowl
  • Large mixing bowl
  • Wooden spoon
  • Whisk
  • Toothpicks
  • Wire rack

Directions

  1. Preheat oven to 350˚ F. Line muffin tin with paper baking cups; set aside.
  2. In medium mixing bowl, combine flour, baking soda and salt.
  3. In large mixing bowl, whisk applesauce, sugar, egg, oil and vanilla.
  4. Add flour mixture to applesauce mixture and stir just until combined. Batter will be lumpy.
  5. Gently fold in blueberries.
  6. Spoon some batter into each muffin cup. Bake 25 to 30 minutes or until a toothpick inserted in center comes out clean. Transfer muffins to wire rack to cool.

Mix It Up

  • Add a streusel topping:
  • 1/4 cup packed brown sugar
  • 1/4 cup whole wheat pastry flour
  • 1/4 cup butter or trans-fat-free margarine, melted
  • In a small bowl, mix all ingredients together until crumbly. Sprinkle over muffins before baking.

    3. Help spoon batter into baking cups
    4. Put pan in oven
    5. Remove pan from oven

    1. Line muffin pan with baking cups
    2. Measure and mix ingredients
    3. Fold in blueberries
    4. Spoon batter into baking cups
    5. Insert toothpick to test for doneness

Get-the-Party Started Zucchini Pizzas

  • Zucchini make a delicious crust in these mini-pizzas.
  • Level 2
  • Makes 8 mini pizzas
  • Time 20 minutes

Ingredients

Sauce

  • 1 can (6 ounces) tomato paste
  • 1/2 cup water
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon paprika
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

For pizzas

  • 1 zucchini - 3” diameter
  • 1 cup shredded mozzarella cheese

Equipment

  • Liquid measuring cup
  • Measuring spoons
  • Medium mixing bowl
  • Whisk

Directions

  1. In a medium mixing bowl, whisk together all sauce ingredients until smooth.
  2. Slice zucchini into ¼” slices. Spread with 1 to 2 tablespoons of sauce and sprinkle with 2 tablespoons of shredded cheese.

    2. Slice zucchini
    3. Put in oven
    4. Remove from oven
  2. Kids
    1. Measure and mix ingredients
    2. Spread sauce on zucchini slices
    3. Sprinkle with cheese
