Chef Feker prepares fresh pasta with seafood chowder



Chef Feker joins FOX6 WakeUp to share his recipe for porcini infused fresh pasta with seafood chowder.

IL MITOS PORCINI INFUSED FRESH PASTA WITH SEAFOOD CHOWDER
Serves 4-6

Ingredients
• 1 pound of fresh shrimp, deveined
• 2 cloves of garlic chopped fine
• ½ cup Wisconsin corn kernels
• ½ cup of white wine
• ½ cup of chicken broth
• ¼ cup of heavy cream
• 8 cherry tomatoes cut in half
• 2 tablespoons olive oil
• 1/4 cup shallots, finely Sliced in half rounds
• 1 teaspoon grated lemon zest
• 10 fresh basil leaves shredded
• 1/4 cup fresh parsley leaves

• sea salt, for pasta water and freshly groundpepper and salt to taste

Directions
1. Heat olive oil in a large sauté pan over medium heat. Add tomatoes, shallot and then garlic Sauté a few minutes until shallots soften and translucent.

2. Add shrimps, the grated lemon zest and the herbs and corn, sauté for 1 minute. Add the
wine and then the broth. And cook until reduced by ½. Turn off the heat and add the cream and set aside.

3. Meanwhile cook the pasta in a large pot of well-salted and rapidly boiling water and toss with the sauce and serve.
