Butchers busy processing deer as gun hunt comes to a close



SAUKVILLE (WITI) -- One week into Wisconsin's gun deer hunt, butchers are busy processing venison for hunters who have bagged a big one. A popular destination is Blau's Saukville Meats -- a family owned, old-fashioned meat market.

"You've got a question about meat, we've got an answer," said owner Mark Blau.

Blau says colder temperatures during this year's hunt have allowed hunters to keep their meat preserved and frozen at home.

"Instead of the warm weather mad rush -- no rush. They are just trickling in," said Blau.

The seasonal rush, however, is still in full swing. Blau's has extra workers on hand to keep up with demand. The market expects to process up to 700 deer this season.

"A lot of them want their cuts, a lot of them donate it for the food pantry," said Blau.

The gun deer hunt ends on Sunday, December 1st, followed by the muzzleloader hunt from December 2nd through December 11th. An antlerless hunt runs from December 12th through December 15th.
