Chocolaty Chips

Prep/Total: 15 minutes

3 cups kettle-cooked potato chips
1/2 cup semisweet chocolate chips
1 teaspoon shortening


Arrange potato chips in a single layer on a waxed paper-lined baking sheet.
In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over chips. Refrigerate 5 minutes or until set. Yield: 6 servings.

Nutrition Facts: 1/2 cup equals 140 calories, 9 g fat (4 g saturated fat), 0 cholesterol, 75 mg sodium, 16 g carbohydrate, 1 g fiber, 1 g protein.

Chocolate-Raspberry Whoopie Pies

I've saved this jam-filled whoopie recipe for years after cutting it out of a newspaper. It's one of my grandson's personal favorites. —Nancy Foust, Stoneboro, Pennsylvania

Prep: 40 min. Bake: 10 min./batch + cooling

1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup 2% milk
FILLING:
1 jar (7 ounces) marshmallow creme
1/2 cup shortening
1/3 cup seedless raspberry jam
1 teaspoon vanilla extract
2 cups confectioners' sugar


Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, cocoa, baking soda, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.
Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake 6-8 minutes or until set and tops spring back when lightly touched. Remove from pans to wire racks to cool completely.
For filling, in a large bowl, beat marshmallow creme and shortening until blended. Beat in jam and vanilla. Gradually beat in confectioners' sugar until smooth. Spread on bottoms of half of the cookies; cover with remaining cookies. Yield: about 2-1/2 dozen.

Nutella Hand Pies

Prep: 10 min. Bake: 20 min.

1 egg
1 tablespoon water
1 sheet frozen puff pastry, thawed
3 tablespoons Nutella
1 to 2 teaspoons grated orange peel
ICING:
1/3 cup confectioners' sugar
1/2 teaspoon orange juice
1/8 teaspoon grated orange peel
Additional Nutella, optional


Preheat oven to 400°. In a small bowl, whisk egg with water.
Unfold puff pastry; cut into nine squares. Place 1 teaspoon Nutella in center of each; sprinkle with orange peel. Brush edges of pastry with egg mixture. Fold one corner over filling to form a triangle; press edges to seal. Transfer to an ungreased baking sheet.
Bake 17-20 minutes or until golden brown. Cool slightly.
In a small bowl, mix confectioners' sugar, orange juice and orange peel; drizzle over pies. If desired, warm additional Nutella in a microwave and drizzle over tops. Yield: 9 servings.
