Polka King Gravy
1 c. Door County Brewing Co. Polka King Porter
2 tbsp. unsalted butter
4 garlic cloves, chopped
1/2 c. shallots, chopped
1 large onion, sliced
1/2 lb. crimini mushrooms, sliced
1 tbsp. worcestershire sauce
1 tbsp. corn starch
2 tbsp. water
5 cups beef broth
1 tsp salt
1 tbsp cracked black pepper

1. In a large frying pan, on medium-high heat, add butter, garlic, shallots, and onions until they glisten.
2. Add mushrooms. You can add any kind of mix or variety of mushrooms.
3. Add a pinch of salt and cracked black pepper.
4. Sauté mushrooms until they start caramelizing. There should be a golden brown glaze stuck to the pan.
5. Deglaze the pan by adding the beer until it starts to cook off.
6. When half the beer reduces, add the beef broth and worcestershire sauce.
7. Add more salt and/or pepper to taste.
8. In a separate bowl, mix cornstarch with water to smooth out lumps until it becomes a paste.
9. Add the starch mixture to the sauce and stir lightly. Lower the heat and the sauce will thicken.
10. Cover and turn off heat. Pour when ready. Enjoy!
