      METHOD

      For the Fried Pickles;

      Mix together corn starch and flour with 1 tablespoon of salt. Take pickle slices and lightly dredge them in dry mix. Deep fry until golden. Remove from oil and let rest on paper towel to remove excess oil.

      For the Burger;

      Generously season hamburger patty with salt and pepper. Place on hot grill, turning 45 degrees after 90 seconds to give good grill marks. Flip over and place cheese curds on top. Cook for 60 seconds then place burger on pie tin and move to oven. Cook until cheese curds start to slightly melt. Remove from oven and let burger rest for 2 minutes to contain all juices.

      Take pork belly and deep fry for two minutes until crisp. Coat with barbecue sauce. Toast Kaiser bun with a touch of butter on griddle until golden brown. Place burger on top of bottom bun, then place pork belly atop the cheese curds. Finish by adding pickled jalapenos and fried pickles.
