Bowls with Balance -- Greek


Ingredients

2 beef Strip Steak Boneless, cut 1 inch thick (about 8 ounces each)


2 medium zucchini, cut lengthwise in half
2 medium red bell pepper, cut into quarters
1/2 cup non fat Greek yogurt
1/4 cup diced cucumber
1/4 cup lemon juice, divided
1/4 teaspoon salt
2 cups cooked quinoa
2 tablespoons chopped fresh parsley
1/2 cup reduced fat feta cheese
1/3 cup sliced olives


Instructions
