(WITI) -- In this week's Dining with Duria, Angelica shares a recipe for Classic Carrot Raisin Salad.

Carrot Salad

Yield: About 4 cups

    Directions:


      NOTE: If raisins aren’t soft or plump, pour enough boiling water over them to cover and let sit for about 5 minutes until soft.  Drain well before mixing them in salad.

      NOTE: You can also substitute the mayonnaise for Mirachle Whip or Greek Yogurt.  Taste before adding any sweetener.
