Taste of summer: Check out this recipe for Tequila Shrimp Ceviche



MILWAUKEE -- In this week's Dining with Duria, Angelica shows us how to make tequila shrimp ceviche.

Recipe for Tequila Shrimp Ceviche

Ingredients:
- 1 lb. shrimp, peeled and deveined
- 2 Tbsp Tequila
- ½ cup freshly squeezed lime juice (about 2-3 lemons)
- ¼ cup chopped red onion
- 1 tbsp minced jalepeño pepper (remove the seeds)
- ½ cup diced cucumber
- ½ cup diced tomato (remove the seeds)
- 1 avocado, diced
- 1/3 cup chopped cilantro (extra for garnish)
- ¼ tsp of salt
- ¼ tsp ground pepper
- Tortilla chips for serving

Directions:
1. Bring a pot of water to a boil and cook shrimp for 1 minute. (No longer, otherwise, it`ll overcook.)  Drain and put shrimp in an ice bath to stop the cooking. Chop shrimp into bite-sized pieces.

2. In a large bowl, combine tequila, lime juice, chopped onion, salt, pepper, and chopped jalepeños. Stir shrimp in and cover and place bowl in fridge for 30 minutes.

3. Remove from fridge and stir in cucumber, tomato, avocado, and cilantro.

4. Serve with tortilla chips.
