Cherry Walnut Tart

Crust:

    Filling:

Blend cream cheese and butter. Mix in flour until completely blended. Chill at least 30 minutes. Shape into 24 equal-sized balls (about 3/8-1/2 ounce each). Press into and up sides of 24 tartlet tins (you may use mini cupcake pan instead). Chill again while preparing the filling.

In a small saucepan, heat cherry juice until it starts to boil. Add chopped cherries. Cover, turn off the heat, and let the cherries soak for 10-15 minutes. Drain and lightly squeeze out juice. Set aside.

In a medium bowl, mix brown sugar, egg, butter, cornstarch, vanilla, cinnamon, and salt until smooth. Mix in nuts and cherry mixture. Place a heaping teaspoon into each pastry shell. Bake 30 minutes, or until filling is puffed and pastry is golden. Makes about 24 tarts.
