Beer Cheese Soup Bar

Pretzel Croutons, Brat Crumbles, Crispy Tater Tots, Spicy Kale and Brussel Sprout Chips, Candied Bacon, Salami Chips,Sliders

Crostini with Maple Bacon Bourbon Jam and Roasted Red Pepper Tapenade

Wisconsin Beer Cheese Soup


    Heat Butter in a large pot over medium heat, Add onion, celery , carrot , peppers and onion and cook about 3-4 minutes until translucent and a little tender.

    Add the flour to the vegetables and whisk.  Cook 1-2 minutes and add the mustard, paprika, thyme, and Worcestershire sauce. Cook another 2 minutes

    Add the beer and stock , whisking  so lumps do not form and turn heat down to a simmer. Simmer for 20-30 minutes.  Puree in batches in a blender or food processor and return to pot.

    Warm the half and half in a pan and whisk into soup – remove soup from the heat and add the grated cheese, one handful at a time and whisking until smooth and creamy.

    MAKE SURE THE SOUP IS NOT TOO HOT WHEN ADDING THE CHEESE OR IT WILL CURDLE AND CLUMP INSTEAD OF MELT. SHOULD BE UNDER BOILING POINT

    Season with salt and pepper and serve with an array of topping for your soup bar

    Spicy Kale or Brussels Sprout Leaves


      Sweet and Spicy Candies Bacon


        Preheat oven to 400

        Dredge bacon on both sides in brown sugar , sprinkle with pepper flakes and line on baking sheet lined with parchment paper.

        Bake for about 20 minutes depending on the thickness of bacon . It should be crisp and glazed. Drain excess grease on paper towel.

        Salami Chips


          Roasted Red Pepper and Artichoke Tapenade


            In the bowl of a food processor, combine the red peppers, artichoke hearts, cilantro, Parmesan cheese, olive oil, capers, garlic, and lemon juice. Pulse until finely chopped and the mixture is blended. Transfer to a serving bowl and season to taste with salt and pepper. Cover and refrigerate for at least 2 hours before serving to blend the flavors. Serve with crostini

            Maple Bourbon Bacon Jam


              Cook the bacon over medium heat in a large saucepan. When it's crispy, remove and place on paper towels to cool. Save one tablespoon of grease in the pan.

              Add onions and sauté until translucent.

              Add garlic. Sauté until you can smell it (about one minute).

              Add the vinegar to deglaze the pan.

              Add the coffee, brown sugar, syrup, bourbon, chilies, cumin, and pepper. Crumble the bacon and add it in. Reduce heat slightly and simmer until about half the liquid has cooked off. (It took us 30 minutes.)

              Transfer jam to a food processor. Pulse until it's smoother, but not totally smooth (you want to see/taste the bacon chunks). Makes about a pint of jam. Schmear on crostini or just about anything.

              Pizza Monkey Bread


                Preheat oven to 350

                Heat oil in a small saucepan and add garlic for flavor. Remove garlic and brush a bundt pan or other large casserole dish. Reserve remaining oil in a large bowl and add Italian seasonings – stir to combine.

                Cut pizza dough into small balls the size between a marble and a golf ball. Cut pepperoni or sausage or mushrooms in small pieces . Wrap dough around pepperoni and square of cheese

                Mix all the ingredients in a bowl with olive oil and the seasonings

                Add coated pizza balls to bundt pan evenly distributing.

                Cook in the middle rack of the oven for 40-45 minutes until the top is browned and the middle is cooked through. Flip over on a plate while it is hot – place some marinara in the middle in a small bowl for dipping.

                Alternatively you can roll pizza dough pout to a rectangle – top with ingredients and roll up – cut into spirals and place in a pan touching each other

                Adjust baking time.

                Vodka Marinated Tomatoes


                  Dipping Salts and Lemon Pepper Seasoning

                  Cut a shallow cross shape in the top of each tomato, put them in a large bowl and add the garlic (as much or as little as you like), a little salt, Tabasco (optional) and above all the vodka.

                  Allow the tomatoes to soak up the vodka, stirring occasionally; Let them soak overnight at room temperature (after 24 hours they can be put in the refrigerator).

                  Once you are at the party pour into the large oversized martini glass/individual containers for tailgating . Serve with a Lemon Pepper and Salts for dipping and a shot glass with toothpicks.

                  TIP: If there are any left over – make a lightened up “Hail” Mary

                  By putting the tomatoes in a blender with a little horseradish – pour into a glass , top with your favorite beer and garnish.

                  The “Kick Off” Cocktail Punch


                    Add all ingredients to a pitcher- Add ice.

                    Run lime around the outside of a glass and dip in smoked sea salt.

                    Pour, garnish with lime wheel and enjoy.
