WAUWATOSA -- Chip spent the morning at Lutheran Home and Harwood Place Senior Living in Wauwatosa. He's learning about how they're switching over to farm fresh ingredients and learning some of their recipes straight from the chefs.

Autumn Roasted Spaghetti Squash & Grilled Chicken

Serves 4 people

Ingredients


    Cut spaghetti squash in half lengthwise and scrape out seeds. Reserve seeds for toasting.

    Rub cut side with olive oil and place cut side down on baking sheet. Bake for 45 minutes or until tender.

    Let cool. Scrape out threads of squash with the tines of a fork.

    Heat olive oil in a skillet over medium high heat, add garlic, sauté until fragrant then add squash. Toss until hot, add tomatoes, herbs and salt and pepper. Separate onto to four plates. Top each with a sliced chicken breast and grated asiago cheese.

    Pumpkin Pie Smoothie:


      Whipped cream, cinnamon, and/or crushed graham cracker for garnish

      Blend all ingredients in blender, or immersion blender until smooth, Pour into two glasses and top with whipped cream, cinnamon, graham crackers if desired. Serve and enjoy!
