Co-owner Joseph Sifanios said he is now paying three times as much for eggs compared to the same time in 2024. Sifanios said the cost started to skyrocket in January.
What they're saying:
"The most profitable thing we have is eggs – which was profitable, is now becoming somewhat of a liability, I would say," Sifanios said. "I think it will get worse before it gets better."

Pinched at the grocery store
By the numbers:
Customers are also feeling the pinch at the grocery store. FOX6 News stopped at three places in Waukesha. Pick 'n Save and Aldi are both limiting sales to just two packages per customer. Target touts a sale – and its shelves are bare.

Bird flu has pushed the prices of eggs up. The average U.S. price in December was $4.15 for a dozen.

Places like Waffle House have already added a 50-cent per egg customer surcharge. Sifanios said it had not come to that at The Coop. But he worries about the inevitable day when he will be left scrambling.

The U.S. Agriculture Department expects egg prices will rise an additional 20% in 2025.
