Fajita Chicken Nachos with Plantain Chips
Ingredients:
1 Tbsp. Fresh Thyme extra-virgin olive oil
1 small white onion, finely chopped
1 (1 lb.) pkg. fajita seasoned Mighty Spark ground chicken
1 (15 oz.) can Fresh Thyme organic black beans, drained and rinsed
2 (6 oz.) pkg. Fresh Thyme sea salt plantain chips
1 cup Fresh Thyme shredded Colby-Jack cheese
1 jalapeño pepper, sliced
2 radishes, thinly sliced
1 avocado, pitted, peeled, and chopped
Chopped fresh cilantro, for garnish
2 Tbsp. Fresh Thyme habanero hot sauce
Fresh Thyme organic black bean and corn salsa, for serving
Lime wedges, for serving
Instructions:
Preheat oven to 375°F.
In a medium skillet, heat oil over medium heat. Add onion. Cook until softened, stirring occasionally. Add fajita seasoned ground chicken and cook until browned. Stir in beans and cook for 6 minutes or until meat mixture is thickened and heated through, stirring occasionally. Remove from heat and set aside.
On an oven-safe serving platter, arrange chips. Top with meat mixture, cheese, and jalapeño slices. Bake for 6 to 8 minutes or until cheese is melted. Remove from oven; top with radish slices and avocado. Garnish with cilantro, if desired. Drizzle with habanero hot sauce. Serve with salsa and lime wedges.
Cauliflower Wings
Ingredients:
2 heads of fresh cauliflower
1 cup almond flour
4 eggs
1 tbsp. Garlic powder
¼ tsp. Salt
¼ tsp. Pepper
¼ tsp. Paprika
1 bottle of your favorite hot sauce
Instructions:
Preheat the oven to 400˚F and line a baking sheet with parchment paper.
Cut cauliflower into 2 inch size pieces
Whisk eggs and place into a shallow pan. Set aside.
In a large bowl, add the flour, paprika, garlic powder, salt and pepper and stir until well-combined. Set aside.
Dip each cauliflower wing into the egg mixture and then dip cauliflower into the flour mixture and place on your baking sheet.
Bake for 30 minutes, flipping halfway through
Remove wings from the oven, add hot sauce and enjoy!
Protein-Packed Pizza Bites
Ingredients:
1 package Egglife Wrap
1 jar marinara sauce
1 bag of shredded mozzarella cheese
¼ cup of Shredded Cheese
18 pepperoni slices
1 tbsp. basil
Instructions:
Preheat your oven to 350 degrees
Spread marinara sauce, cheese, 3 pepperoni slices and a sprinkle of basil onto each wrap
Roll each wrap up and slice into 3 pieces
Place in the oven for 5–7 minutes until cheese is melted
Remove from the oven and enjoy!
